Orange Chocolate Cake

Recipe from "Cooking with Trader Joe's Cookbook: SKINNY DISH!": This recipe idea came to me while I was making a batch of Shamrock Smoothies (also in SKINNY DISH!). I was eating a piece of dark chocolate and licked the spoon containing orange juice concentrate for the smoothies. At first I said “whoops,” and then I grabbed my recipe notebook! Here’s the cake that resulted, which evokes a heavenly chocolate and orange taste marriage. It’s so simple that it may become your go-to chocolate dessert.

Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ cup sugar
  • ¼ cup cocoa
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup orange juice concentrate, thawed
  • 1/3 cup vegetable oil
  • 2 tsp vanilla
  • 1 tsp apple cider vinegar
  • ½ cup plus 1 Tbsp filtered water
  • 1 Tbsp powdered sugar, or ¼ cup thin vanilla frosting to top

Instructions

  • 1 Preheat oven to 350° F.
  • 2 Sift dry ingredients together (minus the powdered sugar). Add thawed OJ concentrate (use a microwave for quick thawing) and remaining wet ingredients, stirring until smooth.
  • 3 Pour batter into lightly oiled 9 x 9-inch baking dish and bake for 30-35 minutes, until a toothpick inserted in center comes out clean. Let cake sit 10 minutes before sprinkling with powdered sugar (use a sifter for a delicate, and evenly topped cake), or drizzling with vanilla frosting.

This was the second cake I requested for my birthday, and it wasn't as great as the lemon basil cake. I found it tasty, but a little dry. The orange chocolate flavors are nice, but the weren't as prevelant as I'd like. I was underwhelmed.

Sounds yummy, but haven't tried it yet. I did the Weight Watchers points plus calculations and it came to points plus! I've tried the dark chocolate orange candy and it might satisfy your sweet tooth with less PP and no baking! Delicious but hurry and get them while they last at TJ's, only cents! ( cal and PP for slices, or per slice)
