Grilled Veggie Sandwich with Lemon Garlic Sauce

Eggplant has great texture and give a nice heartiness in vegetarian sandwiches. In this sandwich, the rich eggplant and zucchini slices contrast nicely with some fresh, peppery arugula and tangy feta. Don't skip the lemon garlic sauce - it adds so much flavor and brings it all together. If you're not crazy about garlic, start with a little less and see how you like it.

Ingredients
- 1 bag frozen Misto Alla Griglia (Marinated Grilled Eggplant & Zucchini)
- Petits Pains Rustiques (4 Country Style French Rolls)
- Fresh arugula (a few handfuls)
- Crumbled Feta with Mediterranean Herbs
- 4 Tbsp mayo
- 4 tsp lemon juice
- 4 cubes frozen Crushed Garlic (or 3-4 small cloves garlic, crushed)
Instructions
- 1) Thaw bag of eggplant overnight in fridge, or microwave until warm per package instructions.
- 2.) Cut rolls in half.
- 3.) In a small bowl, stir together the mayo, lemon juice, and garlic until smooth.
- 4.) Build the sandwiches by drizzling a bit of the sauce into the bottom half of each roll. Add a big handful of arugula, then 1/4 of the warmed eggplant and zucchini slices, and finish with a topping of feta.
Additional Notes
To make just one sandwich: use one roll, a handful of arugula, 1/4 of the veggies, and for the sauce use 1 Tbsp mayo, 1 tsp lemon, and 1 clove/cube garlic.

I must say this recipe is absolutely delicious! I don't buy store bought mayo EVER, but I wanted to try this recipe so I made some homemade mayo, which is easy by the way and tastes so much better. The sauce is what really makes this wonderful. If you have the time, try it with homemade mayo! It literally tasted like something from a restaurant or bistro.

This sounded so delicious that I had to try! I didn't want to use mayo so I used EEVO instead of the mayo and prepared the same way but I forgot to buy feta so that was omitted but was absolutely delicous and may be the best sandwich I have ever prepared. Thanks so much!! Can't wait to make it again!

I love this recipe. The lemon garlic sauce and feta really make this a unique and delicious tasting sandwich. I often use frozen eggplant and zucchini as called for the in the recipe. However, I have also used fresh eggplant and zucchini, sliced up, and grilled on the BBQ. I served this at a summertime party and got rave reviews from the guests. Definitely a recommended recipe!

This is a very yummy sandwich. I like the feta with it all and have subbed in chevre, also. We ate many of these last summer and have just started in again as the weather warms up. They are great with fresh herbs of many combinations.

I saw this recipe posted on Twitter today and stopped by TJs on my way home from swimming. I just made this sandwich for lunch, and it was DELICIOUS!!! Im not much of a chef, and this sandwich was super easy to make, and tasted like I went to a fancy restaurant! And all of the ingredients for sandwiches totaled only $!!! A steal!!! Just had this for lunch. The lemon garlic mayo really makes this wonderful. They were out of Rustique rolls so I used TJs ciabiatta rolls instead and topped it all with fresh cilantro leaves which really gave it a pop with the peppery arugula. It was so good, I ate about half the sandwich before I even realized I forgot to add the feta cheese! I added it, but goes to show, its delicious even without it.I quickly and easily thawed the frozen veggies in the broiler in my oven.
