Taco Soup

This soup combines the flavors and textures we all love about tacos, into a hearty soup - and it's easier to handle than messy tacos! I love crowd-pleasing one-pot meals like this, where everyone can customize their own toppings. I think the one topping that is mandatory is tortilla chips!

Ingredients
- 1 (approx 1.3 lb) pkg boneless chicken breasts or thighs, or 1 pkg Chicken-less Strips (vegan/vegetarian option)
- 1 Tbsp olive oil
- 1 onion, chopped
- 1 pkg Taco Seasoning Mix
- 1 (28 oz) can diced tomatoes
- 2 (15 oz) cans black beans
- 1 (15 oz) can corn, or 1 1/2 cups frozen corn
- 2 cups chicken broth or vegetable broth (optional; use less for a thicker stew)
- Your choice of toppings (tortilla chips, cilantro, sour cream, shredded cheese, avocado, chopped tomatoes, chopped green onions, chopped onions, jalapenos or chiles)
Instructions
- 1. In a large pot, heat olive oil over medium-high heat. Cook onions for 5 minutes, or until softened.
- 2. Add remaining ingredients and heat to boiling. Cover, reduce heat to low, and cook for 1 hour.
- 3. Remove chicken, shred, and return to pot. Stir and heat through before serving.
- Note: see below for slow-cooker instructions.
Additional Notes
Slow cooker method: Place all ingredients into a crockpot and cook for 5-6 hours on low setting. Remove chicken, shred, and return to crockpot. Stir and heat through before serving.

This was a big family hit. I made it in the crock pot and it couldn't have been any easier. But I used a whole packet of Trader Joe's Taco Seasoning and it was a bit too spicy for our family. I'll cut back or leave it out altogether next time. I also loaded up on the toppings...tortilla strips, avocado, cilantro, monterey jack cheese, chopped tomatoes and sour cream. Very delicious!

I love this recipe! It's so easy, plus you can add any other vegetable you need to use. I mad this a few times for football parties and everyone loved it. No one missed the meat!

I used / jar of TJ organic Tomatillo and Roasted Yellow chii salsa instead of the taco seasoning and diced tomatoes = YUMMY! I added some chopped zucchinni too. Fast easy dinner!

Did this in the slow cooker and it was SO easy! My kids thought it was too spicy - so next time I will double the broth. Deffinately worth another try.

It is very easy and good! After finished eating, I realized I forgot to add taco seasoning, and it was still good. So I cannot wait to try this again with the seasoning... I added baked blue corn chips (low fat) and fat free sour cream from trader joe's on top.

This is really good and the flavor's get richer if it sits for a day. I recommend NOT using the Chicken-less strips. Tried it in the soup and it was just really bad. I fished all of the strips out after trying them! I added the whole box of stock and also a can of green chilies to add to the umph factor. Really good.

Just tried this soup yesterday and it was great. I used chicken stock after all it is a soup so don't omit it. also I was really short on black beans so I used a black bean burger I had in my freezer for a little extra flavor. Yum it was so good. My new favorite soup and I make a lot of soups in the fall and winter and freeze for easy dinners since I am alone now. This was such a easy and simple soup. If you like tacos try this soup.

This was fantastic! A new favorite AND a healthy Mexican food meal. I recommend using the broth because even with the broth it was very hearty and thick. Also, the taco seasoning is mild so if you want some spiciness you will have to add it yourself. But it's delicious as is.
