Oven Roasted Potatoes

Oven roasted potatoes are delicious -- crispy, golden, and seasoned on the outside, soft and moist on the inside. Use thin-skinned baby potatoes (also called new potatoes) and leave the skin on. No peeling = very little prep work. Use red potatoes, gold potatoes, or both. The olive oil helps the potatoes roast in the pan, but much of the oil stays in the pan.
